Mexican Bean Burger

  • One sliced carrot
  • Chopped green pepper – ½
  • Chopped onion – ½
  • Kidney beans – one tin (400g)
  • wholemeal flour – 4 tablespoons
  • salsa – 450g (16 oz)
  • salt to taste
  • dried breadcrumbs – 100g (4 oz)
  • chilli powder – 1 pinch
  • olive oil – 1 tablespoon
  • freshly ground black pepper – 1/2 teaspoon

Preparation

The preparation of Mexican bean burger takes almost twenty minutes. The cooking time is fifteen minutes. The procedure is as follows:
  • Dip the carrot in bowl full of water. Cover the bowl with cling film, and put it in the oven for two minutes. Drain the water after cooking it in the oven.
  • Mash this carrot along with the beans in a bowl. Add onion, salsa, green pepper, wholemeal flour and breadcrumbs. Season the mixture with black pepper, salt and chilli powder. You can add flour for making the mixture firmer.
  • Make eight patties.
  • Heat a frying pan and put olive oil into it. Fry these eight patties until they turn brown.
