Taste the Delicious Garden Burger and Go Green
Do you want to taste the delicious summer vegetable flavors? Then have a bite of this awesome Garden Burger.
Ingredients for the marinade:
- Virgin olive oil – 3/4 cup
- Wine vinegar with herb flavor like tarragon vinegar – 1/3 cup
- Crushed garlic – three cloves
- Chopped parsley – one tablespoon
- Crushed basil – one tablespoon
- Oregano – one tablespoon
- Thyme – one teaspoon
- V-8 juice – six ounces
- Your choice of wheat pita or Italian rolls – six pieces
- For a healthier alternative, use celery salt
Vegetable ingredients:
- Slice one regular sized eggplant into six. Make each slice at least 3/4 inches thin.
- Peel one big Bermuda onion and slice into six discs.
- Slice one big Zucchini squash lengthwise. Make six strips.
- Slice one big yellow squash lengthwise. Make six strips
- Slice one large beefsteak tomato into six. Make each slice half an inch thin.
How to prepare:
Marinate all the vegetable ingredients in the marinade mix for no
less than two hours. After marinating the veggies coal-grill the
vegetables over medium heat turning the side over once it is slightly
charred. Grill your choice of bread over the coal lightly, too. Place
the vegetables on the bread in layers and sprinkle it with celery salt.
Serve hot off the grill.
