Ingredients
  • 1 diced onion
  • 3 diced spring onions
  • 1 clove of minced garlic
  • ¾ cup fresh mushrooms, preferably diced
  • 1 cup of mashed potato
  • 1 tsp dried parsley
  • Salt/pepper to taste
  • Avocado sauce
  • 2 tbsp cooking oil
  • Olive Oil for frying
Method
Saute the garlic and onions in oil for 5 minutes, till the onions turn soft. Add the spring onions and the mushrooms. Continue cooking for 3 more minutes. Keep aside.
Mix parsley, salt, pepper, mashed potato. Add the mushroom mix to it. Combine well.
Shape into patties and shallow fry in oil till they turn golden brown, about 2 minutes on both sides.
When assembling burgers, spread avocado sauce on the bun base and then top with patties.
Veggie Spicy Black Bean Burger

Ingredients
  • 1 can of drained black beans
  • ¾ diced onion
  • 1 tsp cayenne pepper sauce

  • Corn flour mix

Method
Take the black beans in a bowl, mash and add all ingredients. Mix well until fully combined. Shape into patties, dip into corn flour mixture, dust both sides with bread crumbs and shallow-fry till golden brown.
Assemble between burger buns, top with cheese, lettuce and tomato ketchup to have great tasting burger in minutes.
Tofu burger

Ingredients
  1. ½ pound tofu (extra-firm)
  2. 2 tbsp each of corn meal, whole wheat flour and quick-cook oats
  3. 2 tbsp of freshly chopped basil leaves, cleaned and dried
  4. ½ tsp dried thyme
  5. ¼ tsp shredded ginger
  6. Salt to taste
  7. Oil to fry
Method
Put tofu and all other ingredients into a food processor or blender and mix well (on a low speed) till fully combined. Shape into patties and shallow fry in oil, till cooked to golden brown hue.
Assemble between burger buns and top with onions, lettuce, cheese and mustard.
