Carrots, Summer Squash and Courgette Burgers

Carrots, summer squash and courgettes are some of the healthiest vegetables available on the market. When combined together to make burger patties, they turn out to be one of the most nutritious burgers there is.

Preparation:

Preparation for the carrot, summer squash and courgette burger would usually take 35 minutes.
  • Grated onion and 2 cloves crushed garlic would first be sautéed in a frying pan along witholive oil. The carrots, squash and courgette can then be added.
  • Cook and stir for 2 minutes before removing from the heat. 100g of porridge oats, 30g grated cheese and 1 beaten egg could then be added to the vegetables.
  • Stir in some soy sauce for better flavor and coloring. Let stand and refrigerate for 1 hour.
  • On a large plate, add some flour for coating. Form the vegetable mixture to 8 round patties.
  • Drop each one of the patty into the flour for some light coating on both sides.
  • The burger patties can then be pan fried, grilled or barbecued depending on one’s preferences.
  • The patties would usually be cooked after 5 minutes and would change to a golden brown color.
This would make 8 carrot, summer squash and courgette burgers in just under 35 minutes.
