Cashew Nut Burger

The Cashew Nut Burger is one of those veggie burgers that can satisfy the appetite of any vegetarian.
Aside from being easy to prepare with only 15 minutes preparation time and another 15 minutes cooking time, it is also quite convenient.

Preparation:

  • Preparation of the cashew nut burger would start with preheating the oven to 180 ?C / Gas Mark 4.
  • 100g of cashew nuts would then be roasted for 8-10 minutes on a baking sheet until the nuts turn brown.
  • In a large frying pan, 1 tbsp of olive oil would then be heated for sautéing 1 chopped red onion, 1 grated carrot, ½ cup chopped leeks, 100g of sliced mushroom, 1 clove of garlic and ¼ tsp of thyme leaves.
  • Wait until the vegetables are soft and the liquid has evaporated. 100g of cooked brown rice could then be added and cooked for an additional 1 minute. Allow the mixture to cool slightly.
  • Place the cashew nuts in a food processor and pulse until coarsely chopped.
  • The rice mixture can then be added alongside 1 tbsp soy sauce, 40g of Gruyere cheese, 50g breadcrumbs, 1 tbsp honey, 1 egg yolk and seasoning.
  • Blend for another 5-6 minutes until the whole mixture is smooth. It can then be formed into patties but needs to be refrigerated for at least an hour.
  • Afterwards, it can be fried and just like any burger patty.
