Aside from being easy to prepare with only 15 minutes preparation time and another 15 minutes cooking time, it is also quite convenient.
Preparation:
- Preparation of the cashew nut burger would start with preheating the oven to 180 ?C / Gas Mark 4.
- 100g of cashew nuts would then be roasted for 8-10 minutes on a baking sheet until the nuts turn brown.
- In a large frying pan, 1 tbsp of olive oil would then be heated for sautéing 1 chopped red onion, 1 grated carrot, ½ cup chopped leeks, 100g of sliced mushroom, 1 clove of garlic and ¼ tsp of thyme leaves.
- Wait until the vegetables are soft and the liquid has evaporated. 100g of cooked brown rice could then be added and cooked for an additional 1 minute. Allow the mixture to cool slightly.
- Place the cashew nuts in a food processor and pulse until coarsely chopped.
- The rice mixture can then be added alongside 1 tbsp soy sauce, 40g of Gruyere cheese, 50g breadcrumbs, 1 tbsp honey, 1 egg yolk and seasoning.
- Blend for another 5-6 minutes until the whole mixture is smooth. It can then be formed into patties but needs to be refrigerated for at least an hour.
- Afterwards, it can be fried and just like any burger patty.
