Aubergine Burger

If you are looking for a vegan-friendly burger that is fast and easy, the Aubergine Burger is the way to go. Cut aubergine in thick slices and top cheese and burger buns. You can sever it with trimmings too.

Ingredients:

This recipe serves 6 people
• 1 aubergine sliced into 2 cm rounds
• Margarine 15 grams
• 6 burger buns
• Cheddar cheese good for 6 people
• Tomatoes
• ½ white onion sliced in circles
• Lettuce
• 80 grams of pickles (dill) sliced
• Mayonnaise
• Tomato ketchup
• Yellow mustard

Procedure:

You only need 10 minutes maximum for preparation and 15 minutes max for cooking
1. Cook the aubergine slices in the microwave for 5 minutes until the centres are cooked.
2. In a medium-high heat, melt the margarine. Fry the aubergine on each side until slightly toasted. Place the cheese and let it melt on top of the aubergine. Once melted, remove the aubergine from the pan
3. Arrange the aubergine like assembling a burger. The lower part of the burger bun, topped with the aubergine slices with melted cheese. Then top it with lettuce, onions, tomatoes and pickles. Add mayonnaise, ketchup and mustard for more flavour.
